New Things I Tried:
There is going to be a lot of pictures in this post. Since Sunday was such a shitty day (official winter storm day) I decided I was going to try some recipes that I had been wanting to do. I have fallen in love with Cassie's blog and wanted to make my own tortillas from this recipe. I did not have enough whole wheat flour so I used regular. They still turned out amazing and I love the use of coconut oil in this recipe. (If you don't have coconut oil you can use any oil you'd like)They were DELICIOUS and easy. I will never buy tortillas again. Ever. *please note that I do have a KitchenAid mixer with the dough attachment making these even easier to make.
The recipe makes 12 tortillas. They are 120 Calories each or 4P+ each. I made my own salsa and had myself and cheesy black bean quesadilla. It was wonderful and so incredibly filling.
Also from Cassie's blog was this little concoction that I had on Friday night for dinner.
I would have never thought to make tuna with hummus. I used roasted red pepper hummus and in my food processor chopped up a little onion, red bell pepper, roasted garlic and a couple of dill pickles. I then added it to the tuna and hummus and cooked as Cassie explains. I was amazed at how good it was. I will make this again... but I need to buy more tuna first.
When I was at Meijer I picked up some Mason Jars because I wanted to do salad-in-a-jar for lunches during the week. I ate one yesterday and it was great.
There is no ryhme or reason to these. Just make sure that the dressing is in the bottom and the lettuce is the last thing you put in. I then dump all the contents into a bowl and it spreads out so nicely. The one pictured has this dressing (yum), red bell pepper, cucumber, tomatoes, sunflower seeds and lettuce. I have the same one for today and tonight I'm going to make up some more! They stay so crisp in the jars too. The veggies weren't soggy at all.

Other Things:
I was supposed to meet with Linda yesterday but we both decided to cancel due to weather/road conditions. I will not see her again until January 24. That makes me kind of sad but at the same time I have been doing so much better since seeing her and I know I have some of the tools to fight any issues I might have until we meet again. I took a peek at the scale this morning to make sure I didn't go too crazy over the weekend and I'm still doing well. I finally feel like I am beating my battle with food. It is liberating.
There wasn't much exercise this weekend, unless you count vigorous cleaning, and I do. When I clean I work up a sweat. I don't mess around. Haha. Minus all that I just spend the weekend snuggling with Andrew and watching movies. He didn't have to work yesterday either which was wonderful! I got him for 3 entire days. He has 3 more days left at the EPA and no more nights!!!

Babies:
I brushed out Caesar's tail yesterday and it is always so pretty when I do! Problem is, Walter LOVES to chew on Caesar's tail causing knots. Caesar is a good sport though and lets him play and then is an angel when I go to brush him. The only thing Caesar hates is when I clean his ears and put medicine in them....
Walter was having an interesting hair day..... The static was not doing him any favors! We have had the humidifier on full blast all weekend but the amount of static in the air is still crazy. I would hate to think what it is like without the humidifier.....
